Banana Flax Muffins

One of the instructor’s from the Y brought in a muffin sample a couple of weeks ago for our class to try out. She also gave out the recipe. I loved it. It has taken me a bit to make them at home and have the kiddo test them out.


So the verdict is:
Amber said “Loved it”, Leann said “Can I have another?”

So here is the recipe:

Yields 12 muffins   Approx. Calories: 160
Bake 325 25-30 mins or until toothpick comes out clean. Cool 5-10 mins

1 cup whole wheat flour

¼ cup ground flax seeds

¼ cup wheat germ

½ tsp baking soda

¼ tsp baking powder

½ tsp salt

¼ tsp cinnamon

¼ tsp nutmeg

1 cup brown sugar (not packed)

2 ripe bananas, mashed

¼ cup unsweetened applesauce

¼ cup canola oil

1 tsp vanilla

2 eggs



Spray muffin pan with cooking spray or line with paper liners. Combine all dry ingredients , including sugar. Whisk together wet ingredients and mashed bananas together in a separate bowl. Make a well in the dry ingredients and pour wet into. Stir slowly and gently until flour mixture is just incorporated into the wet mix. Scoop batter into the muffin pan, fill 3/4 of the way full.



So there you have a well balanced snack or if you pair it up with a protein you have a nice breakfast.
